A big part of how I relentlessly pursue my joy is with food! We eat three times a day! Food is delicious! I believe every meal of mine should be delicious and I use should very deliberately. (Otherwise, I try not to should on myself.)

A big part of what has helped my thrive during this pandemic living outside of delivery zones and living on a budget that’s not even friendly for take out–noodle recipes! Knowing in one week I’ll have three kinds of noodle dishes if I want has been a big delight. I want to help you learn what’s elevated my life experience through this blog!

This five ingredient peanut sauce has been my go-to for several years and works really well with my dietary needs! No to low sugar, no gluten, no dairy.

I still reference the recipe because sometimes I space out and forget an ingredient and it does matter the proportions (roughly).

I keep these five ingredients on hand all the time for noodles on a moment’s notice! My favorite peanut butter is the chunky salted trader joe’s peanut butter (also great value for the money and no junky additives). Second choice would be actual real peanut butter ground at the store it really shines in this sauce! And then third choice whatever you have.

Now that you’re back let me tell you how I use it!

I love Zoodles (zucchini noodles). I use this recipe whenever I get neighbor zucchini, end of summer to Fall. I have found that half zoodles, half pad thai rice noodles is great for texture! Here’s a link to the spiralizer I use for Zoodles!

I also will throw in other veggies with the zoodles, like shredded cabbage, shredded carrots, peas sometimes. I also have made this with no zoodles and no noodles and simply cabbage, carrots etc…

Dust it with some chopped scallions! I love having scallions around especially when I can use them for bone broth if I space on them in the fridge and they go bad!

I have also used rice wrappers (you can buy at the Asian grocery store but I’m linking to Amazon) and wrapped up some cold cooked vermicelli noodles, carrrots, cabbage and then used the magic five ingredient peanut sauce as a dip!

If you’re getting really adventurous try deep frying those rice wrapped rolls! I have used rice wrappers on leftover bbq sides and meat (coleslaw is basically cabbage with dressing) and fried them up and that was marvelous.

I hope this inspires you to make yourself some delicious noodles! Or even save yourself from take out one or two nights in a week!
